Maurice salad

Turkey salad recipes are not especially common, and turkey is often replaced with chicken. But I wanted to try a salad with turkey. Our butcher had a special offer, so I bought a lovely turkey fillet and made this Maurice salad.

INGREDIENTS

Adjust servings in the full version

original yield — 8 servings
turkey fillet 400 g
ham 400 g
hard cheese (type "Swiss" or "Edam") 300 g
gherkins 6-8
leaf lettuce 1 head
pepper-stuffed olives 1 can
For the dressing
mayonnaise 200 g
white wine vinegar 2 tsp
lemon juice 1 tsp
sugar 1 tsp
Dijon mustard (wholegrain) 1 tsp
dry mustard (mustard powder) 1/4 tsp
Parsley 2 sprigs
boiled eggs 1
TIP

I rubbed the turkey fillet with spices, put it in a roasting bag and baked it for about 25 minutes. Once cooked, I removed it from the bag and let it cool.

Next time I would like to try coarsely grating the cheese.

I also had half a bell pepper left over, so I added it to the salad.
