Kefir crepes with boiling water
I have made these kefir crepes with boiling water for years. Soured milk or yogurt also works, though I did not enjoy the version made with ryazhenka. The crepes are light and full of tiny holes, so they are better served with sour cream, melted butter or jam than used for stuffing.
I make the pancake dough in a mixer. It’s more convenient for me, and my hands remain free.
Briefly mix the eggs, kefir, sugar and salt in a mixer bowl. Add the sifted flour and baking soda all at once. The mixture will be quite thick and cling to the beaters.
With the mixer running, carefully pour 1.5 cups of hot water into the bowl. Be careful, splashing may occur. The dough becomes thinner and slides off the beaters and back into the bowl.
