Banana nut loaf cake
A very convenient banana cake recipe: margarine can be easily replaced with vegetable oil, you can use any nuts. It’s absolutely easy to prepare: it’s in the category of “mix everything and pour it into a mold.” The taste is very bright, the aroma is rich. The crumb structure is soft and delicate. Pieces of nuts add a little piquancy. Doesn't crumble when cutting.
This banana nut muffin is super sweet. If this is critical for you, then reduce the amount of sugar by half.
I tried baking this cupcake with unripe yellow bananas. It turned out to be just a cupcake. Without the strong taste and aroma of bananas. In general, if you are going to cook according to this recipe, take obviously overripe bananas.
Wash the nuts if necessary and dry on a paper towel. Fry in a frying pan until lightly browned, stirring constantly.
Roughly chop the toasted nuts. I like noticeable pieces in the cake, so I leave them fairly coarse.
Add melted (not hot!) margarine, sugar and eggs. Blend everything together with the same blender. You can simply mix with a spoon. The main thing is to get a homogeneous liquid mass.
In another bowl, mix sifted flour, salt, baking soda and baking powder. Combine both mixtures. Knead into a homogeneous dough. At the end add chopped nuts.
If you use metal molds, first grease them with butter or margarine and sprinkle with flour. There is no need to carry out any additional manipulations with silicone ones.
Pour the batter into the prepared pans. Bake in an oven preheated to 170°C for about 60 minutes. Readiness to check with a stick.
I used 2 ring molds, each 20 cm in diameter. One larger ring mold, 26 or 28 cm across, also works. The central hole helps the cake bake through. Alternatively, use 2 loaf pans measuring 13*23 cm.
