Salad with smoked chicken and Korean carrots

SALADS ≈ 20 minutes 4 servings 25 October 2026 · 0 comments
STEP 6 — Combine the Korean-style carrots, chicken, eggs and cucumber in a salad bowl. Add a little mayonnaise and mix. Sprinkle the croutons on top.

Smoked chicken and Korean-style carrots are delicious on their own, whether at a picnic or a gathering with friends. This was the first time I had combined them in a salad, and it was a success with both children and adults. The carrots I used were fairly mild.

For the salad I used smoked thighs. They are fatter. If you want drier meat, take the breast.

Separate the smoked chicken meat from the skin and bones and cut into small pieces.

03

Cut the cucumber into strips.

04

Peel the eggs and cut into cubes.

05

I bought Korean carrots ready-made at the store. But you can cook it yourself.
