Spiced Pumpkin Muffins

Autumn muffins. This kind of baking always makes me think of autumn, when I crave something warm, soft and wonderfully fragrant. These muffins are very easy to make; preparing the pumpkin puree is the hardest part. They are spiced, with a moist but fully baked centre. You can vary the spices however you like, which is one of the things I love about recipes like this.

INSTRUCTIONS
01

I prepare the puree in advance: simmer pumpkin pieces with a little water, then blend until smooth.

02

Mix the wet ingredients in a bowl.

03

Measure the dry ingredients into another bowl and mix them together.

04

Combine the wet and dry ingredients. The batter should be pourable and not too thick.

05

Divide the batter between muffin moulds and bake in an oven preheated to 180°C for 25 minutes.
