Lazy farmer cheese dumplings

STEP 7 — Lower the dumplings into boiling water and stir gently to keep them from sticking. They cook quickly: once the water returns to a boil and they float, remove them. Serve drizzled with the melted butter and sugar.

Lazy vareniki take me back to childhood: a sunny summer morning, a plate of hot dumplings, a bowl of berries, a glass of cold milk and almost three months of holidays ahead. Bliss!

original yield — 1 serving
Farmer cheese 200 g
Egg 1
Wheat flour (plus extra for dusting) 3 tbsp
salt 0.5 tsp
sugar 1 tsp
To serve
Butter 25 g
sugar 1 tbsp
INSTRUCTIONS
01

First of all, put butter and sugar on the stove to heat. The fire is the weakest. You want the butter to melt, but not boil, and the sugar to dissolve.

02

Immediately place a wide pan of salted water on the stove. While kneading the dumplings, the water will just boil.

03

Beat farmer cheese, eggs, salt and sugar with a blender until smooth. This is if the farmer cheese is hard or has large grains. If the farmer cheese is pasty, then simply mix it with eggs, adding salt and sugar.

04

Gradually add flour and knead the dough. The dough should be soft, pliable, roll well into a ball, while remaining slightly sticky.

05

Flour the work surface. Divide the dough into 2 pieces, roll each into a log and cut into small pieces. Flatten slightly to make little rounds.

06

Dust a board or plate well with flour and lay out the dumplings while you work on the remaining dough. Flour is a must, otherwise they will stick tightly.

07

Lower the dumplings into boiling water and stir gently to keep them from sticking. They cook quickly: once the water returns to a boil and they float, remove them. Serve drizzled with the melted butter and sugar.
