Guacamole

Guacamole is a Mexican avocado dip with fresh tomatoes, onion, garlic and seasonings, with roots going back to the Aztecs. I tried it recently and loved it, so I am sharing the recipe here. It is quick to make and requires no special skills or equipment. Good ingredients—especially ripe avocados—make all the difference.

For guacamole, choose ripe avocados without dark dents. Remove the pit from the avocado, peel and place in a bowl. Mash with a fork, sprinkling with lime or lemon juice to prevent the flesh from darkening. Add some salt.
Add the finely chopped onion. Dice firm-fleshed tomatoes and add them to the same bowl, along with the minced garlic, chopped cilantro and red pepper.
Mix everything and put it in the refrigerator for a while. Guacamole is served with corn or regular chips, toast, or simply spread on bread. The sauce perfectly complements meat and fish dishes.
Bon appetit!
