INGREDIENTS

Adjust servings in the full version

original yield — 8 servings
watermelon (pulp without seeds) 800 g
olive oil 100 ml
lime (Of course, you can replace it with lemons, but it’s better with lime) 3
salt (add to taste) 1 tsp
ground black pepper (also to taste) 1/2 tsp
fresh mint (leaves and young shoots) 1 bunch
feta cheese 300 g
TIP

Before preparing the salad, keep the watermelon in the refrigerator. If you first prepare the salad and then put it in the refrigerator, it will become watery. And it doesn't look very appetizing.

By the way, it’s more convenient to put the salad on plates with a slotted spoon or a spoon with holes in it. This way, excess liquid will remain in the salad bowl.

Bon appetit!

INSTRUCTIONS
01

Remove the watermelon rind and white flesh, then remove any seeds. Cut the flesh into cubes and leave in a colander to drain.

02

Squeeze the limes into a small bowl. Add the olive oil, salt and pepper and whisk lightly. Taste the dressing and adjust it to your liking.

03

Remove leaves and young shoots from mint sprigs. Chop finely.

04

Transfer the watermelon to a salad bowl. Add mint, pour over dressing and stir. Crumble the feta with your hands and sprinkle over the salad. Stir and serve immediately.
