Oatmeal soup

Everyone in our family loves soup, including during Lent. An online friend shared this simple oat soup with me. I was doubtful at first, but after trying it, added it to my regular recipes. It has a pleasant, slightly creamy texture and is quick to make with either chicken broth or water.

Add the potatoes to a saucepan of boiling water. While they cook, prepare the onion and carrot.
Finely chop the onion and coarsely grate the carrot. Fry in vegetable oil until golden, then add the tomato paste and cook briefly.
After 15 minutes, add the oats and fried vegetables to the soup. Season with salt and simmer for 5 minutes. Add the garlic, turn off the heat, cover and leave to stand for another 15 minutes.
