STEP 5 — Mix all ingredients in a large salad bowl. Season with salt and ground black pepper. Drizzle with olive oil and lemon juice. Serve immediately.

Adding fresh mint to a cucumber and tomato salad was a revelation. I usually associate mint with desserts and drinks, but its refreshing flavor works beautifully here.

Adjust servings in the full version

original yield — 6 servings
fresh cucumbers 4
tomatoes 4
Onion (small onion or half a large one) 1
bell pepper (red or yellow) 1
garlic 2 cloves
Parsley 1 bunch
fresh mint 4-5 sprigs

Do not add all the mint at once. Try with half the amount first.

INSTRUCTIONS
01

Cut tomatoes and peppers into small cubes. First remove the seeds from the pepper.

02

Finely chop the cucumbers too.

03

Cut the onion into cubes. I didn’t take a photo of the red onion, so let it be white.

04

Pass the garlic through a press or grate it. Chop the greens.

05

Mix all ingredients in a large salad bowl. Season with salt and ground black pepper. Drizzle with olive oil and lemon juice. Serve immediately.
