STEP 9 — Your croquettes are ready. Enjoy them, and give yourself credit for a dish well made!

After catching up with the witch-hat atelier manga, I turned to its spin-off cookbook to make the wait for new chapters easier. A cookbook was an unexpectedly welcome alternative to late-night doomscrolling: there is no long-running plot to keep track of and no algorithm tempting me to scroll on. There is one drawback, though: the characters cook and eat all sorts of delicious things, and now I want some too!

So let us make something delicious. Here is a recipe from chapter one of the witch-hat atelier cookbook.

INSTRUCTIONS
01

Lay out all the ingredients for the photo shoot. The photo shows the wrong bacon, it needs white stripes; don't repeat after me

02

Peel the potatoes and let them cook. Place in cold water, add salt and cook for 30 minutes from the moment it boils.

03

Cut the bacon into small cubes and fry over low heat

04

In the same frying pan where you fried the bacon, fry the mushrooms in the rendered fat

05

Potatoes are boiled: add butter and milk and puree

06

Assembling the filling: combine potatoes, mushrooms and bacon in one bowl, mix. Cool, for example 3 hours in the refrigerator

07

We make croquettes: collect a heaping tablespoon of filling and form into a ball. Roll in flour, egg and breadcrumbs one by one

08

Heat the oil in a saucepan. Drop in a few breadcrumbs to check it: they should bubble, sizzle and fry. Cook the croquettes for 4 minutes, a few at a time, then drain on paper towels.

09

Your croquettes are ready. Enjoy them, and give yourself credit for a dish well made!

How to dilute vinegar to the required strength — Recipes often call for 9% or 6% vinegar, but you may only have 70% vinegar essence at home. What should you do?…
