original yield — 3 servings
bulgur (or couscous; use whichever you have, as either works here) 100 g
Parsley (generous bunches) 2 bunches
green onions 1 bunch
fresh mint 2 sprigs
Onion (small) 1
tomatoes 3
lemon 1/2
olive oil (or another vegetable oil of your choice) 2 tbsp
salt to taste
INSTRUCTIONS
01

Fill the bulgur or couscous with an equal volume of boiling water, cover with a lid and leave the couscous for 30 minutes, the bulgur for 1.5 hours until all the water is absorbed.

02

Finely chop the greens. Cut the onion into small cubes.

03

Cut the tomatoes into cubes. You don't have to remove the skin.

04

Place the soaked grains, herbs, onion and tomatoes in a large bowl.

05

Add olive oil. Squeeze lemon juice. Salt. Mix.

06

That's it, the salad is ready. Bon appetit!
