STEP 3 — The tomatoes are fried for about 4 minutes on each side. When a golden brown crust appears, I turn them over.
I served them hot with tomato sauce and mayonnaise.

This recipe opens my Literary Recipes collection, where I will make dishes cooked by characters in books. I am starting with something simple: fried green tomatoes. I was not sure how they would turn out, but with a few unripe tomatoes still left, I decided to try them before having to wait for next year's harvest.

TIP

This dish may not be to everyone's taste. The tomatoes remind me of fried zucchini slices, only tarter, and do not have a particularly distinctive flavor. I liked them much better once they had cooled.

INSTRUCTIONS
01

I cut the tomatoes into slices. Mixed flour with breadcrumbs. I also added salt and pepper there.

02

I coated half the tomato slices in the flour mixture and put them in hot oil. The coating did not stick very well, so I dipped the remaining slices in beaten egg before coating them and adding them to the pan.

03

The tomatoes are fried for about 4 minutes on each side. When a golden brown crust appears, I turn them over. I served them hot with tomato sauce and mayonnaise.
