STEP 4 — In a small bowl, mix sour cream, yogurt, garlic and olive oil. Add grated cucumbers and dill. Mix everything again and put it in the refrigerator until serving.

I only recently learned that the sauce we have been making for years is called tzatziki and comes from Greece. It is delicious, easy and wonderfully versatile. In summer it is almost always on our table, alongside meat, vegetables or chicken.

INGREDIENTS

Adjust servings in the full version

original yield — 10 servings
cucumber (long) 1
Sour cream (thick) 400 g
plain Greek yogurt (unsweetened) 150 g
garlic 2 cloves
Dill 2 sprigs
olive oil (extra virgin, cold-pressed) 1/2 tsp
INSTRUCTIONS
01

Grate the cucumber and place in a sieve or colander to drain excess liquid. I also press lightly with my hands.

02

Rinse and dry the dill. Excess water in the sauce will not do anything good. Finely chop the dill. The smaller the better.

03

Pass the garlic through a press or grate it on a small grater.

04

In a small bowl, mix sour cream, yogurt, garlic and olive oil. Add grated cucumbers and dill. Mix everything again and put it in the refrigerator until serving.
